British Wagyu Conference Farm-To-Fork

In May 2023, 250 people attended the two-day Warrendale Wagyu Conference in Telford, Shropshire, UK, held in partnership with the British Wagyu Association & Wyndford Wagyu.

Welcoming retailers, processors and a strong line-up of UK and international speakers as well as both current and prospective farmer partners, the event was staged by the East-Yorkshire family farming business, Warrendale Wagyu, who run a fully integrated Wagyu beef supply chain.

The farm-to-fork story starts with a visit to Dovecote Park, the processor responsible for producing Warrendale Wagyu beef for the retailer Aldi UK.

Here in the carcase hall, we see a 310kg Fullblood carcase which has been hung for 7 days on the bone.
we now turn to the cutting room and
see a forerib grading BMS 9+ reflecting the UK’s adoption in 2021 of MIJ carcase camera technology.
shows us some fantastic sirloins which now move into the Development Kitchen under chefs Ben & Chris.

The second day sees delegates greeted with a superb lunch menu including a British Wagyu Steak Sandwich – roasted sirloin, deli roll, caramelized onion chutney, parmesan mayo and dressed rocket.  Other dishes on offer are the ‘go-to’ British Wagyu Burger or slow-cooked British Wagyu Short Ribs.

That evening at the drinks reception, guests are treated to canapes including a Shui Mai Wagyu Beef Dumpling with Black Garlic presented by the Michelin-starred Hakkasan restaurant.

Dinner is the showpiece event with British Wagyu tomahawks carved at the table accompanied by seasonal vegetables, roast potatoes, Wagyu dripping and red wine jus.

A bottle of special commemorative Warrendale Wagyu gin to round off the meal or take home!
